Tasty Tuesday // Yummy Guacamole

Hey friends! Happy Tasty Tuesday! Today I'm bringing you an amazing guacamole recipe I found on FoodNetwork.com! I'm obsessed with it (although I am obsessed with a lot of things, I promise this one is good).

Weird Fact: Until about a year or two ago, I used to hate avocados/guacamole. I avoided them like the plague. But miraculously one day, I had some avocado in my salad and I fell in love! It was like my taste buds did a 180 and suddenly put the fruit on my delicious list. Isn't it weird how our taste buds do that sometimes?

Funny Fact: I often mix up 'avocado' and 'guacamole' in my vocabulary. I will say things like "Could you cut up some guacamole to put in my salad?" or "I wanna make some avocado tonight." 
Yeah..... my husband laughs at me every time it happens.

Guacamole 

Ingredients

3 Haas avocados - halved, seeded, and peeled
1 lime - juiced (or 2 Tbsp of lime juice)
1/2 tsp salt
1/2 tsp ground cumin
1/2 tsp cayenne
1/2 medium onion, diced
*to spice things up add 1/2 jalapeno pepper - seeded and minced
2 Roma tomatoes - seeded and diced
1 Tbsp chopped cilantro
1 clove garlic - minced (or 1/2 tsp minced garlic)

Directions

In a large bowl, place the scooped avocado pulp and lime juice, toss to coat. Using a potato masher (or a fork, for us less privileged cooks) add the salt, cumin, and cayenne and mash. Then, fold in the onions, [jalapeno], tomatoes, cilantro, and garlic. 

The recipe says to let set at room temperature for 1 hour and then serve, but I'm impatient and it tasted just fine eating it right after! :)

I omitted the jalapeno and tomatoes - jalapenos cus I'm a wimp and tomatoes cus we were out!

Voila! There you have it!

As for me leaving the seed in the dip, I heard somewhere that if you leave the seed in, it'll last longer. True or false? Let me know!

Connor and I are trying to be more active/healthy so last night to make my run more "fun" I decided to make a picture with my running trail on the app Map My Run.


The end result was a very tired, out of shape Ariel and an awkward looking snail.
However, it did make me run longer than I usually would so maybe I'm on to something here...

  1. I am the same way with Guac. I avoid it like crazy.
    Maybe I need to have my husband toss some on a salad, and make me eat it. I know its sooooo good for you, BUT it has zero appeal.
